Best Healthy Summer Snack: Zucchini Nachos

Looking for a new healthy go-to snack this summer? Try low-carb Zucchini Nachos! Loaded with veggie goodness, these nachos are quick and easy to prepare. They're also gluten-free and keto-friendly. A perfect appetizer for that summer pool party!

RECIPE

Slice zucchini, drizzle w/olive oil, and pan roast, grill, or bake for 2-3 minutes on each side so zucchnini stays firm as the nacho base.

 

Place on baking sheet & swith oven to broiler mode.

Add cheese and broil on high until cheese melts.

Then sprinkle the beans, onions, jalapenos, avocado slices, fresh pico de gallo, and cilantro. Ingredients below :)
